- 1 x 200g can white beans, drained
- 2-3 celery sticks, chopped
- 100g blueberries
- 1 red pepper, deseeded and diced
- 1 tbsp balsamic vinegar
- 1 tbsp apple juice
- 1 tsp wholegrain mustard
- mixed salad leaves
- In a bowl, mix together the beans, celery, blueberries and red pepper.
- Combine the vinegar, apple juice and mustard and pour over the salad. Toss well and spoon on to mixed leaves.
