White bean, celery, blueberries & pepper Salad

  • 1 x 200g can white beans, drained
  • 2-3 celery sticks, chopped
  • 100g blueberries
  • 1 red pepper, deseeded and diced
  • 1 tbsp balsamic vinegar
  • 1 tbsp apple juice
  • 1  tsp wholegrain mustard
  • mixed salad leaves
  1. In a bowl, mix together the beans, celery, blueberries and red pepper.
  2. Combine the vinegar, apple juice and mustard and pour over the salad. Toss well and spoon on to mixed leaves.
